Epicure Nacho Cheese Beef Burgers
Try these burgers with Epicure Sweet & Spicy Mustard. Make extra and freeze for easy dinners next week.

Ingredients

Instructions

1. In a large mixing bowl, combine beef, Nacho Cheese Dip Seasoning, breadcrumbs, Seasoning for Burgers, and egg.
2. Use your hands to thoroughly mix the ingredients. The mixture should hold together well, but not be sticky. Chill mixture in fridge for 15 minutes. Divide mixture into 4 one-quarter lb (113 g) portions (try using Epicure Burger Press).
3. Heat Epicure Eclipse® Coated Professional Frying Pan over medium-low heat. Cook each patty 4–6 minutes per side (flip patties, then top with mozzarella), until no longer pink in centre and the patties are slightly browned.
4. Spread your choice of condiment on buns and top with lettuce, onion or tomato.

Epicure's Smoked Salmon Cheese Ball

With all of the "Christmas in July" commotion about lately, I thought that I'd dust off some of the great options for entertaining.  


It sounds so crazy to be talking about Christmas when folks are standing around the BBQ,  but at least you don't have to shovel the snow!

Epicure's Smoked Salmon Cheese Ball

So simple, so delicious!

Ingredients

  • 1 cup (250 ml) grated white cheddar cheese
  • 1 — 8 oz (250 g) brick light cream cheese
  • 1 tsp (5 ml) Worcestershire sauce
  • 1 tsp (5 ml) Epicure's Lemon Dilly Dip Mix
  • 1/4 cup (60 ml) coarsely chopped smoked salmon
  • 1/2 cup (125 ml) finely shredded Parmesan cheese
  • 1/2 tsp (2.5 ml) Epicure's Lemon Dilly Dip Mix
  • 2 tsp (10 ml) chives

Instructions

1. Combine first 5 ingredients.
2. Form into a ball or log.
3. Roll in mixed Parmesan, Lemon Dilly Dip Mix, and chives.

Epicure's Easy Cheesy Tuna Melts

The avocados in guacamole are an excellent source of monounsaturated fats.

Ingredients

  • 2 — 4 oz (120 g) cans light tuna
  • 1/2 cup (125 ml) prepared Epicure's Guacamole Dip
  • 1 apple, diced
  • 4 whole-wheat pitas or tortillas
  • 3/4 cup (180 ml) low-fat marble cheese, grated

Instructions

1. Preheat oven to 400° F (205 °C).
2. Combine tuna, Guacamole Dip and apple in a mixing bowl.
3. Place pitas or tortillas on Epicure's parchment-lined Baking Sheet. Top with tuna mixture and cheese.
4. Bake until cheese melts and pita is crisp. Serve warm.

Epicure’s Taco Meatloaf Pasta Casserole

Ingredients

  • 1 lb (450 g) lean ground beef or chicken
  • 1 tsp (5 ml) vegetable oil
  • 2 Tbsp (30 ml) Epicure's Seasoning for Meatloaf
  • 1/2 cup (125 ml) prepared Epicure's Beef Bouillon
  • 1 — 28 oz (796 ml) can diced tomatoes
  • 2 - 3 Tbsp (30 - 45 ml) Epicure's Taco Seasoning
  • 4 cups (1 L) cooked pasta such as fussilli, rotini or shells
  • 2 cups (500 ml) grated low-fat cheese – your choice
  • 3 green onions, diced
  • Crushed whole-grain tortilla chips – optional

Instructions

1. Preheat oven to 450° F (230° C).
2. In Epicure’s Eclipse® Coated Professional Frying Pan, sauté beef in oil with Seasoning for Meatloaf over medium-high heat for 6–7 minutes, until cooked through. Add Beef Bouillon, tomatoes and Taco Seasoning. Bring to a boil, then reduce heat. Simmer 4–5 minutes.
3. Turn into a large mixing bowl and stir in pasta, half the cheese and green onions. Turn into a 9” x 13” (23 cm x 33 cm) baking dish or large casserole pan. Sprinkle with tortilla chips, if desired, and remaining cheese.
4. Bake, uncovered, 15–20 minutes, until bubbly and cheese is melted.

Epicure's Pasta Primavera Frittata

Go meatless once per week. Only 10 minutes to prep and 25 to bake for an easy weeknight meal.

Ingredients

Instructions

1. In Epicure's Multi-Purpose Pot, cook pasta according to package directions.
2. Preheat oven to broil.
3. In a large mixing bowl, whisk together eggs, milk, 3 Onion Dip Mix and Pesto Herb Mix. Stir in pasta, broccoli and tomato. Season with Sea Salt and Black Pepper. Set aside.
4. Lightly spray Epicure’s large Eclipse® Coated Professional Frying Pan with vegetable oil and heat over medium heat. Pour egg mixture into pan, stirring with a heat-resistant spatula for 1 minute.
5. Reduce heat to medium-low and cook for 6–8 minutes. The sides and bottom should be firm, and the top slightly runny.
6. Sprinkle with Parmesan and place under the broiler for 3 minutes. Cut into wedges and serve.
Thanks to the high basil content, 1 Tbsp (15 ml) prepared Epicure's Pesto contains more antioxidants than 1/2 cup (125 ml) chopped sweet cherries.
