This yummy recipe comes together in just 3-6 hours in your crockpot and will yield 8 servings at a cost of $3 per serving.
Serve with 3 tbs prepared Guacamole, 1⁄4 cup prepared Poco Picante Salsa, 1 cup mixed veggies, in season, your choice.
Ingredients
3 tbsp oil
3 tbspFajita Seasoning
Sea Salt, if desired
Black Pepper, if desired
1 1⁄2 lbs (690 g) boneless, skinless chicken breasts, cut into strips
1 onion, sliced
2 bell peppers, sliced
16 small whole-grain or corn tortillas, warmed
Preparation
- In a small bowl combine oil and Fajita Seasoning. Season with Salt and pepper, if desired
- Toss chicken, veggies, and oil mixture together in a slow cooker and spread out evenly.
- Close lid and cook 3 hours on high, or 6 hours on low, or until chicken is cooked and the veggies are soft.
- Serve with tortillas and your favorite fixings.
