Garlic-Dill Summer Salad
Transform leftover cooked veggies into a fresh salad.

1. Place salad greens in a large bowl and add leftover vegetables.
2. Drizzle with Balsamic Vinaigrette.
3. Toss to mix, then generously shake Garlicky Dill Topper overtop.

Recipe Share: Speedy Lasagna - #EPICURE #FEEDMEEPICURE

Who doesn't love Lasagna?  It has always been a favourite around our house..   Can you imagine having this homestyle goodnesss in less than 15 minutes?  -  If you try it, let us know how you changed it up to make it your own!

Speedy Lasagna

Speedy Lasagna
A speedy, protein-packed lasagna that’s on your table in just 20 minutes. Simply layer, cook, and enjoy.
Cost Per Serving: 3.26
Prep Time: 5 minutes
Cook Time: 10 - 13 minutes

Ingredients

  • 1½ C (375 ml) ricotta cheese
  • 3 eggs
  • 3 C (750 ml) prepared Epicure Marinara Sauce
  • 6 oven ready lasagna noodles
  • 1 zucchini, thinly sliced
  • ⅔ C (160 ml) grated mozzarella

Instructions

1. In a mixing bowl, combine ricotta cheese and eggs. Set aside.
2. To assemble, in the bottom of an Epicure Square Silicone Steamer, pour ½ C (125 ml) of the sauce.
3. Next, layer in two noodles, half the zucchini, half the ricotta and ½ C (125 ml) sauce.
4. Repeat layers again using remaining zucchini and ricotta, and another ½ C (125 ml) sauce.
5. Top with a final layer of noodles, remaining sauce, and mozzarella.
6. Microwave, covered, on high for 5 minutes, then remove lid and cook for another 5–8 minutes.
7. Let stand for 5 minutes and serve with your favourite greens. 
Per Serving : Calories 340, Fat 5 g (Saturated 1.5 g, Trans 0 g), Cholesterol 175 mg, Sodium 650 mg, Carbohydrate 46 g (Fibre 5 g, Sugars 12 g), Protein 27 g.
Tips: To make it gluten free, simply use zucchini noodles or gluten-free pasta.

Recipe Share: Braised Celery #EPICURE #FEEDMEEPICURE

Braised Celery

Prep Time: 5 minutes
Cook Time: 18 minutes

Ingredients

Instructions

1. In an Epicure Frying Pan, sauté onion and garlic in olive oil over medium heat, until onion wilts completely and starts to turn brown.
2. Add bouillon, celery, and seasonings to the pan. Cover and adjust to a steady simmer for 15 minutes or until the celery is soft when prodded with a fork.
3. Uncover and increase the heat to high to reduce any remaining liquid.
4. Top with salt, pepper, and Parmesan.
Per Serving : Calories 50, Fat 2.5 g (Saturated 1 g, Trans 0 g), Cholesterol 5 mg, Sodium 75 mg, Carbohydrate 6 g (Fibre 2 g, Sugars 2 g), Protein 2 g.
Tips: Braised celery is a perfect match with roast chicken or pork and is a tasty twist on everyone’s fridge staple.
