Meatless Monday: Epicure's 15 Minute Vegetarian Chili

Epicure’s 15-minute Vegetarian Chili
Double this recipe for easy Epicure’s Cheater’s Sloppy Joes on another day.

Ingredients

  • 3/4 lb (375 g) ground soy round
  • 4 cups (1 L) prepared Epicure's Marinara Sauce
  • 2 cups (500 ml) frozen vegetables – any kind
  • 1 – 2 Tbsp (15-30 ml) Epicure's Chili Seasoning
  • 1 — 14 oz (398 ml) can kidney beans, drained and rinsed

Instructions

1. Heat ground soy in Epicure’s 12-cup Multi-Purpose Pot over medium-high heat for approximately 2 minutes.
2. Add remaining ingredients and heat for approximately 8 minutes.
Per Serving : Calories 380, Fat 1 g (Saturated 0.2 g, Trans 0 g), Cholesterol 0 mg, Sodium 210 mg, Carbohydrate 61 g (Fibre 24 g, Sugars 13 g), Protein 31 g.
Tips: Serve with whole-wheat buns.
