Sometimes it could be because an item used isn't to your liking, perhaps an allergy, or maybe you just don't have an item that the recipe calls for. </span></div>

<span face="Arial, Helvetica, sans-serif">I like challenging myself in the kitchen and this was a big part of my decision to join Epicure in the first place. James and I had dubbed Wednesday night "date night" and we'd made a conscious decision to cook together and we'd often joke that we joined Epicure to "spice up" date night. This comment always gets a laugh because aside from the obvious, neither of us has ever had a thing for what most would consider overly spicy. </span></div>

<span face="Arial, Helvetica, sans-serif">One of my favourite things about Epicure is that what you may have bought as a dip can actually be used in a variety of other ways to suit YOUR way of cooking. </span></div>

<span face="Arial, Helvetica, sans-serif">At one time I ran out of my beloved staples, <a href="https://tammywilson.epicure.com/en/product/1001425" target="_blank">toasted onion</a>, and <a href="https://tammywilson.epicure.com/en/product/1001420" target="_blank">minced garlic</a> and having just embarked on a cooking marathon after stocking up on hamburger that was on sale I was in a bit of a panic. I grabbed 3 Onion dip mix and thought I'd give that a go. I was NOT disappointed!! I have also used French Onion in this fashion. Most recently, I have become a real SPG-aholic. ALL of these are wonderful sprinkled over a roast in the crockpot too! </span></div>

<span face="Arial, Helvetica, sans-serif">I'll often put a tablespoon of spice in my rice steamer with plain white rice for a zip of flavour. Such a little goes a long way ~ and totally vanquishes the dinnertime blahs. </span></div>

<span face="Arial, Helvetica, sans-serif">Some of my favourites are Pico Salsa, Lemon Dilly Dip, Roasted Red Pepper Dip, and 3 Onion Dip Mix. </span></div>

<li>In <a data-prod-num="1006713" href="https://tammywilson.epicure.com/en/product/1006713" popup-product="">Multipurpose Pot - 12 C </a>, cook bacon over medium-high heat until crisp. Meanwhile, place flour, carrots and celery in a paper or plastic bag and shake until thoroughly coated. Discard excess flour.</li>
<li>Remove and set aside bacon, keeping the hot fat in pan.</li>
<li>Add floured vegetables, reduce temperature to low and cook, stirring occasionally, for 5 minutes. Stir in sugar and Balsamic Vinegar.</li>
<li>Add potatoes, cabbage, 3 Onion Dip Mix and Chicken Broth. Stir and simmer for 20 minutes.</li>
<li>Add buttermilk and Lemon Dilly Dip Mix, heat to boiling and season with Salt and Pepper. Serve piping hot.</li>

<span style="font-family: Verdana, sans-serif;">I served it with some leftover mashed potatoes that I'd fried with a little bit of butter and added some Red Garlic Sansel, and a little bit of dried chives. </span><br />

<span style="font-family: Verdana, sans-serif;">The other two were cooked simply with Tuxedo Pepper this night, to make meal prep the next night much faster. </span><br />

<span style="font-family: Verdana, sans-serif;">There's some irony in having learned so many time (and energy) saving tricks for someone who'd be content working in the kitchen all day long but during the week those luxuries aren't always possible. Living with chronic med issues as well, it's so nice to be able to make something extra today, that might end up being a simple lunch of leftovers later in the week, or for a night when you just don't feel like cooking. </span><br />

Hubby offered to take a photo of the remaining one (designated for his lunch the next day) but I thought that taking a photo of just one seemed silly -- like maybe I'd burnt the other two. (ha ha)</span><br />

As I struggled to get back on my feet, I did a lot of reading and research. Nurses laughed at me because I was researching recipes and things I wanted to make for my family when I got back home even though I was in hospital and not being able to eat anything. I guess the Mom instinct kicks in and stays lit.. at least that's what I told them when they bugged. </span><br />

Sometimes that takes the form of taking a meal we eat all the time and changing it up just a little bit, other times it's adding an item to the grocery cart I've never tried before, or choosing a new-to-me spice from my Epicure shelf and buiding a recipe around it, and of course quite often I'll go surfing on Pinterest. The trick, however, is actually going back to actually TRY some of the things you've saved there. Baby steps, right?</span><br />

I was introduced the concept of CORN night years ago from an article I'd read where the author had referred to one night a week as "Clean out the Refridgerator Night" and I adopted it. The kids thought that was hilarious. </span><br />

<span style="font-family: "verdana" , sans-serif;">Last night I made something I've dubbed "Corn Soup" for the same reason. I'd set about cleaning out the fridge and decided to re-invent some leftovers after first getting the OK from my teddybear that he was OK with having me use him for a guinea pig. </span><br />

<span style="font-family: "verdana" , sans-serif;">Normally I'd take a leftover piece of beef, pork or ground meats and turn that into a soup. This time I'd gone in a different direction. </span><br />

<span style="font-family: "verdana" , sans-serif;">Given that I was using leftovers that might have died in the fridge, I've seen some call it "Garbage Soup" but nobody likes the idea of eating garbage.. so CORN Soup it is! The key being is that all food is still in good shape, nothing spoiled, nothing that would make anyone ill. The challenge is in the creativity of reinvention. </span><br />
<span style="font-family: "verdana" , sans-serif;"><br /></span>
<span style="font-family: "verdana" , sans-serif;">So into the crockpot goes.. </span><br />
<span style="font-family: "verdana" , sans-serif;"><br /></span>
<span style="font-family: "verdana" , sans-serif;">First there was the beef broth I'd saved from the roast I'd made last week. I found 2 cups of leftover chili. </span><span style="font-family: "verdana" , sans-serif;">Then I diced up a leftover steak. I used my beloved ceramic slicer and chopped up two celery stalks, and fried up some mushrooms. </span><br />
<span style="font-family: "verdana" , sans-serif;"><br /></span>
<span style="font-family: "verdana" , sans-serif;">I had amped up <a href="http://feedmeepicure.blogspot.ca/2017/03/super-supper-ramping-up-old-favourite.html" target="_blank">Dad's Swiss Steak</a> that we'd always eaten as kids and after having it for dinner, and then lunch the next day there was still a little left over. Diced up the steak, and put the vegies through the food processor. (It looked a little like a marinara sauce by the time it was done). </span><br />
<span style="font-family: "verdana" , sans-serif;"><br /></span>
<span style="font-family: "verdana" , sans-serif;">I added half a freezer bag of rice that was left in the fridge from the night before. I'd never added rice to a soup before so that was new (and a little scary). </span><br />

<span style="font-family: "verdana" , sans-serif;">At this point I had a thick stew-chili like mixture, to which I added a can of diced tomatoes and a can of peas and corn and mixed it all up. </span><br />

<span style="font-family: "verdana" , sans-serif;">It spent the afternoon in the crockpot on low to marry all the components (it was already cooked). I'd planned to save it for the following day, but we ended up testing it out Sunday. </span><br />

<span style="font-family: Verdana, sans-serif;">Years ago my Dad used to make us steak dinner that he'd called "Swiss Steak." I never knew why it was swiss (because it didn't have the cheese with the holes in it anywhere in it) but I never argued. I just knew we liked it. </span><br />

<span style="font-family: Verdana, sans-serif;">Essentially Dad would be a fairly inexpensive cut of steak and pour a can of whole tomatoes over the top and then they'd cook in the oven. The result was always the most tender piece of steak. He was always so proud of how it turned out and would joke that he was Chef Boyardee. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">He always knew how to make us laugh. </span><br />

<span style="font-family: Verdana, sans-serif;">I didn't have whole tomatoes, so I figured diced would have to do the job. They were easier to spread out across the top of everything anyhow. </span><br />

<span style="font-family: Verdana, sans-serif;">I took my ceramic slicer and sliced up two small onions very thinly and layered them over top, then sliced two oblong peppers, one red - one green, and arranged them over top. </span><br />

<span style="font-family: Verdana, sans-serif;">I contemplated adding cheese but thought that might have been pushing my luck. </span><br />

<span style="font-family: Verdana, sans-serif;">I started today with cutting and prepping several bags of onions. Oddly one of my least favourite jobs, it has become one of my favourite time-savers. </span><br />

<span style="font-family: Verdana, sans-serif;">I normally do this once a month, but things have been pretty busy lately so there were quite a few. I had to toss a few spoiled ones, but ended up with over 6 bags to work with. I prepped over half of those today. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">Some days peeling one onion is obnoxious -- the idea of doing 6 bags is somewhat daunting, but once you get going the time goes fairly quickly. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">Of course one of my favourite kitchen helpers makes the job a breeze. I simply peel the onion, cut it in half (or quarters if it is larger) and drop them into the food processor for shredding. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">From there, I bag them into medium sized freezer bags and stack them in the freezer. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">What makes the "job" worthwhile is knowing that I now have 6 or more meals where I can just pop out a bag from the freezer, and either toss it in the soup pot or crockpot frozen or thaw it out if I have something else in mind. </span><br />

<span style="font-family: Verdana, sans-serif;">Today I've kept one batch out to cook fresh for a special date night dinner tonight with my teddybear, but the rest have headed for the freezer. </span><br />

<span style="font-family: Verdana, sans-serif;">I think we all get in rut sometimes. Whether it's the "What's for dinner?" rut of being uninspired in what to make, or whether life's become too busy that fast food and low prep (or no prep) items take centre stage. </span><br />

<span style="font-family: Verdana, sans-serif;">In our house I'm finding that we just don't eat as much as we used to. I'll go on a marathon of cooking and we've got leftovers all week long. It inspired me to work on making a random meal to share with James' parents during the week. I envisioned them having it on a busy day of appointments or something so they don't have to worry about food when they get home. It makes them happy, and makes me smile. It's all good. </span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">We've been kept hopping lately, not just with our work and volunteer lives but we've also taken on taking care of our grandkids during the week. It has taken some juggling but I think we're (mostly) winning most of the time. Some of my "things" have fallen off the list lately and I'm making a concerted effort to get back to them because they are too important to be left behind. </span><br />

<span style="font-family: Verdana, sans-serif;">I've been working on a number of new features for my blog that I'm hoping to roll out over the next few weeks. Other ideas will be in the oven for a bit longer but they won't keep you waiting long. </span><br />

<span style="font-family: Verdana, sans-serif;">I've made a point of doing more food prep and cooking with the kids when they are here. Seeing the gleam in a toddler's eye when he sees the magic of food colouring on stark white icing that first time. One of the many things we take for granted after a while I suppose. </span><br />

<span style="font-family: Verdana, sans-serif;">I've taken a bunch of photos of cooking with the kids, experimenting as well as new recipes with the idea of getting them to the blog, but my "stuff" always seems to end up last on the list. </span><br />

<span style="font-family: Verdana, sans-serif;">I'm beginning to think that saving the best for last was bad advice. I'm going to start going with the eat dessert first philosophy in the coming weeks. </span><br />
