Get Cookin' - Try Something New ~ Order up Chicken 5 Ways - #EPICURE #FEEDMEEPICURE #RECIPE

I was telling a good friend of mine the other day about our recipe section on the Epicure website and how fabulous it is for those nights when you're scratching your head trying to figure out what to feed your family for dinner and it occurred to me that things have been so darned busy lately that I haven't made time to visit it myself. 

I thought I'd do just that, and popped in today.  The fabulous folks at Epicure have updated the interface I see, and made it even simpler to use.  Gotta love 'em!! 


I love how you can look through your fridge and freezer and decide what you want to cook, or check out your pantry and choose a product that you might not have tried before and the system will very quickly give you a vast array of choices to inspire your own Kitchen creative to come out and play. 

I have often ordered a product or products from the catalog that I'd never tried before, or something new to the catalog and upon getting it home wondered what the heck I might make with it.   I love the website for that the most! 

Today I kept it simple.  I picked up a package of boneless chicken breasts when we were out grocery shopping.  I've got so many tried and trues, and go-tos but thought I'd take a peek and see what other inspiration I might find. 

I entered only chicken, under protein and left the rest blank.  You could certainly add your favourite product or a new one you haven't tried to whittle down the options a little further.

The last is very similar to one of my go-tos lately.  Though each time I make it I add a different spice blend.  So far some of our favourites include Our Poco Picante Salsa Mix, Lemon Dilly Dip,  Herb and Garlic Dip Mix,  3 Onion Dip Mix, and of course Italian Dressing Mix.   I'll have to try the Greek Dressing Mix now and see how that comes out.   

I love how versatile our products are and how you can create many other fabulous dishes from products that were perhaps designed for somethng else entirely.  Have I mentioned lately how much I love having Epicure in my world?

Garlic-Dill Summer Salad
Transform leftover cooked veggies into a fresh salad.

Instructions

1. Place salad greens in a large bowl and add leftover vegetables.
2. Drizzle with Balsamic Vinaigrette.
3. Toss to mix, then generously shake Garlicky Dill Topper overtop.

Recipe Share: Speedy Lasagna - #EPICURE #FEEDMEEPICURE

Who doesn't love Lasagna?  It has always been a favourite around our house..   Can you imagine having this homestyle goodnesss in less than 15 minutes?  -  If you try it, let us know how you changed it up to make it your own!

Speedy Lasagna

Speedy Lasagna
A speedy, protein-packed lasagna that’s on your table in just 20 minutes. Simply layer, cook, and enjoy.
Cost Per Serving: 3.26
Prep Time: 5 minutes
Cook Time: 10 - 13 minutes

Ingredients

  • 1½ C (375 ml) ricotta cheese
  • 3 eggs
  • 3 C (750 ml) prepared Epicure Marinara Sauce
  • 6 oven ready lasagna noodles
  • 1 zucchini, thinly sliced
  • ⅔ C (160 ml) grated mozzarella

Instructions

1. In a mixing bowl, combine ricotta cheese and eggs. Set aside.
2. To assemble, in the bottom of an Epicure Square Silicone Steamer, pour ½ C (125 ml) of the sauce.
3. Next, layer in two noodles, half the zucchini, half the ricotta and ½ C (125 ml) sauce.
4. Repeat layers again using remaining zucchini and ricotta, and another ½ C (125 ml) sauce.
5. Top with a final layer of noodles, remaining sauce, and mozzarella.
6. Microwave, covered, on high for 5 minutes, then remove lid and cook for another 5–8 minutes.
7. Let stand for 5 minutes and serve with your favourite greens. 
Per Serving : Calories 340, Fat 5 g (Saturated 1.5 g, Trans 0 g), Cholesterol 175 mg, Sodium 650 mg, Carbohydrate 46 g (Fibre 5 g, Sugars 12 g), Protein 27 g.
Tips: To make it gluten free, simply use zucchini noodles or gluten-free pasta.
