Epicure's Traditional Apple Crisp


Epicure's Traditional Apple Crisp

Cost Per Serving: 0.64
Prep Time: 15 minutes
Cook Time: 45 - 55 minutes

Ingredients

  • 1 tsp (5 ml) Epicure's Cinnamon (ground)
  • 1/4 cup (60 ml) sugar
  • 10 medium apples, peeled, cored and sliced
  • 1 Tbsp (15 ml) fresh lemon juice
  • 1 cup (250 ml) all-purpose flour
  • 1 cup (250 ml) brown sugar
  • 1/2 cup (125 ml) quick oats
  • 1 tsp (5 ml) Epicure's Baking Powder
  • 1 tsp (5 ml) Epicure's Apple Pie Spice
  • 1/2 cup (125 ml) cold butter

Instructions

1. Preheat oven to 350° F (175° C).
2. Lightly butter a large baking dish.
3. In a small bowl, combine Cinnamon with sugar. In a separate bowl, toss apple with lemon juice and sugar mixture and spoon into dish.
4. In a large bowl, combine remaining dry ingredients. Cut in butter until it resembles coarse crumbs.
5. Cover apples with crumble topping.
6. Bake for 45–55 minutes, or until apples are knife-tender.

Epicure’s Asian Chicken Stir-fry


Epicure’s Asian Chicken Stir-fry

A healthy stir-fry supper is all about timing, not time. A little oil, high heat and rapid searing or steaming of fresh ingredients is all it takes.
Cost Per Serving: 2.47
Prep Time: 15 minutes
Cook Time: 15 minutes

Ingredients

  • 1 - 2 Tbsp (15 - 30 ml) light soy sauce
  • 1 tsp (5 ml) Epicure's Minced Garlic
  • 2 Tbsp (30 ml) Epicure's Asian Stir-fry Seasoning
  • 4 boneless chicken breasts, chopped
  • 1 Tbsp (15 ml) vegetable oil
  • 1 red onion, sliced
  • 1 — 8 oz (227 ml) can water chestnuts

Instructions

1. Whisk first 3 ingredients in a large mixing bowl. Add chicken, cover and marinate in refrigerator for at least 1 hour.
2. Place Epicure’s Eclipse® Coated Wok or Epicure’s Eclipse® Coated Professional Frying Pan over medium-high heat. Add oil and heat for 1 minute.
3. Add chicken and marinade. Flash-fry for 8-10 minutes. Add onion and chestnuts and toss to combine. Continue cooking for 5 minutes and serve warm.
Unlike deep-frying, stir-fried food retains little of the oil. The quick, high-heat cooking of stir-frying preserves more of the nutritional value.

Epicure's French Canadian Tourtière (Meat Pie)


Cost Per Serving: 1.86

Ingredients

  • 1 egg, beaten
  • 2 Tbsp (30 ml) light cream
  • 1/2 lb (225 g) lean ground beef
  • 1/2 lb (225 g) lean ground pork
  • 1/2 lb (225 g) ground veal
  • 2 Tbsp (30 ml) all-purpose flour
  • 2 Tbsp (30 ml) Epicure's 3 Onion Dip Mix
  • 1 Tbsp (15 ml) Epicure's Herb & Garlic Dip Mix
  • 1 tsp (5 ml) Epicure's Pumpkin Pie Spice
  • 2 tsp (10 ml) Epicure's Beef & Steak Seasoning
  • 1 1/4 cups (310 ml) prepared Epicure's Beef Bouillon
  • 1 1/4 cups (310 ml) water
  • 4 cups (1 L) small cubed potatoes, boiled until tender
  • Epicure's Sea Salt, to taste
  • Epicure's Black Pepper, to taste
  • 1 — double 9” (23 cm) pie crust (your favourite recipe)

Instructions

1. Beat egg with cream. Set aside.
2. Cook meats in Epicure's large Eclipse® Coated Professional Frying Pan over medium heat until no longer pink inside. Drain excess fat.
3. Sprinkle flour and Epicure's Seasonings over meat, stirring well.
4. Combine Beef Bouillon and water. Add slowly and stir. Simmer until most of liquid has evaporated. Add potatoes and Sea Salt and Pepper.
5. Remove from heat. Cool to room temperature, or refrigerate.
6. Preheat oven to 425° F (220° C).
7. Place chilled filling into pie shell. Brush edges with egg and cream mixture and top with pastry. Crimp edges and poke a steam holes in top. Cut star shapes from leftover pastry to decorate.
8. Bake 20 minutes. Reduce to 350° F (175° C). Continue baking for 30 minutes.
9. Serve with Epicure's Red or Green Tomato “Ketchup” (find recipe online).

Epicure's Pineapple Glazed Pork Chops

A delicious dinner, ready in under 15 minutes.

Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients

  • 1 — 14 oz (398 ml) can pineapple chunks
  • 1 Tbsp (15 ml) Epicure's Cuban Seasoning
  • 4 — 4 oz (125 g) pork loin chops
  • 1 Tbsp (15 ml) vegetable oil
  • 1 red bell pepper, sliced
  • Epicure's Sea Salt, to taste
  • Epicure's Black Pepper, to taste

Instructions

1. Drain pineapple, reserving juice. Whisk approximately 1/4 cup (60 ml) pineapple juice with Cuban Seasoning and rub onto all sides of pork. Refrigerate for at least 30 minutes.
2. Heat Epicure's Eclipse® Coated Professional Frying Pan to medium-high. Add oil and pork chops. Brown pork on one side, turn over, add pepper and cook for approximately 3 minutes, stirring regularly.
3. Add pineapple, remaining juice and Sea Salt and Black Pepper. Simmer until pork is fully cooked and juice is reduced to a syrupy glaze.
4. Serve warm over steamed rice.
Pineapple and bell peppers are sources of fibre, vitamins and minerals, and lean pork contains iron, B vitamins and zinc.

Tender, seasoned pulled pork makes the perfect topping for cheesy nachos!

Ingredients

  • 1 — 11 oz (340 g) bag tortilla chips
  • 2 tomatoes, diced
  • 2 green onions, sliced
  • 1 bell pepper, diced
  • 2 cups (500 ml) grated low-fat cheese — your choice
  • 1 cup (250 ml) prepared Epicure's Pulled Pork
  • 2 tsp (10 ml) Epicure's Nacho Cheese Dip Seasoning

Instructions

1. Preheat oven to 350° F (175° C).
2. Arrange chips on Epicure's parchment-lined Baking Sheet.
3. Sprinkle with tomatoes, onions and pepper.
4. Top with cheese and Epicure's Pulled Pork. Sprinkle with Nacho Cheese Dip Seasoning.
5. Bake for 10 minutes, or until cheese is melted.
Pork is a great source of protein, vitamin B 12 and zinc – important for building strong, healthy bodies. Make with whole-wheat tortilla chips to maximize fibre.

Epicure's Thai Salad Rolls


Epicure's Thai Salad Rolls

A great light lunch, appetizer or snack on the go. Traditionally dipped in Satay Sauce, Hot & Spicy Stir-fry Marinade or Asian Dipping Sauce and eaten whole.

Prep Time: 15 minutes
Cook Time: 3 minutes

Ingredients

  • 1 lb (450 g) package rice vermicelli
  • 1 lb (450 g) package rice paper rounds
  • 1 recipe prepared Epicure's Indonesian Satay (Peanut) Sauce (find recipe online)
  • 2 carrots, peeled and julienned (matchsticks)
  • 1 red bell pepper, cut into thin strips
  • 1 green bell pepper, cut into thin strips
  • 3 cups (750 ml) finely shredded iceberg lettuce
  • 2 tsp (10 ml) sesame seeds

Instructions

1. Add rice vermicelli to a large pot of boiling water and cook for 3 minutes.
2. Drain, rinse under cold water and drain again. Set aside.
3. To assemble, soak rice paper rounds one at a time in a large bowl of water until limp but not soggy. Shake off excess water and lay on clean counter top.
4. Place 1 heaping tablespoon (about 15 ml) prepared Epicure’s Indonesian Satay (Peanut) Sauce just off centre of round and spread.
5. Arrange 1/3 cup (80 ml) cooked noodles on top of Satay Sauce. Place 2–3 strips each carrot, red and green pepper and lettuce on top of noodles. Sprinkle lightly with sesame seeds.
6. Fold end over filling, then fold in sides and roll up. Place salad roll seam-side down on cutting board or serving platter.
7. Repeat with remaining ingredients.
A light and refreshing twist on traditional fried egg rolls.
Per Serving (1 roll) : Calories 270, Fat 4.5 g (Saturated 0.5 g, Trans 0 g), Cholesterol 0 mg, Sodium 300 mg, Carbohydrate 61 g (Fibre 2 g, Sugars 2 g), Protein 8 g.
Tips: Chef Tip: To serve as an appetizer, place small dishes of dipping sauce(s) at centre of serving platter. Cut rolls into 3 or 4 slices and arrange on platter. Sprinkle with sesame seeds and thinly sliced green onions.

A "berry" good dessert, delicious in any season.

Ingredients

  • 8 large tart apples, peeled, cored and thinly sliced
  • 2 Tbsp (30 ml) lemon juice
  • 3/4 cup (180 ml) sugar
  • 2 tsp (10 ml) Epicure's Spices for Fruit Crumble
  • 1/4 cup (60 ml) berries – your choice
  • 1 1/4 cups (310 ml) all-purpose flour
  • 1/2 cup (125 ml) oat flakes
  • 3/4 cup (180 ml) brown sugar
  • 1/2 cup (125 ml) butter

Instructions

1. Preheat oven to 375° F (190° C).
2. Toss apples with lemon juice. Add sugar, Spices for Fruit Crumble, and berries. Toss to coat and spoon into a deep pie dish or an oven-proof baking dish.
3. Combine flour, oats and brown sugar in a mixing bowl. Using a pastry blender, cut in butter until mixture is crumbly. Sprinkle evenly over apples.
4. Bake 40 minutes.

Spicy and delicious!

Ingredients

  • 8 whole chicken legs
  • Epicure's Sea Salt, to taste
  • Epicure's Black Pepper, to taste
  • 2 Tbsp (30 ml) olive oil
  • 1 — 28 oz (796 ml) can diced tomatoes
  • 1 — 28 oz (796 ml) can crushed tomatoes
  • 2 Tbsp (30 ml) Epicure's Margherita Sauce Mix
  • 1/2 cup (125 ml) olives or 1 cup (250 ml) quartered artichoke hearts - optional

Instructions

1. Season chicken legs with Sea Salt and Black Pepper.
2. Heat oil in a large Epicure’s Eclipse® Coated Professional Frying Pan and brown chicken on both sides. Drain on paper towel and set aside. Drain extra fat from pan.
3. Add tomatoes, Margherita Sauce Mix, and if desired, olives or artichoke hearts to pan. Return chicken pieces to pan and simmer in tomato sauce for 25 minutes.

Ingredients

Stock Your Pantry on a Budget ~ Join a Pantry Club!


I am looking for 10 people who would be interested in being part of an Epicure Pantry Group.

What it involves:

1. Spending $25 a month, before shipping & taxes (if applicable) , for the next 10 months (June - March) on Epicure products (spices, seasonings, baking supplies, holiday favourites such as cranberry sauce & cheeseball mixes, etc) to restock your pantry or to use as gifts (or whatever). You will already be spending close to this on the same products but purchasing them from the grocery store. Epicure is 100% Canadian owned & operated.

2. Receiving the hostess benefits during one of those 10 months (names drawn at random from those who have yet to host). This means you get at least $45 worth of free product as well as at least one half-price item.

You will know in advance which month you are selected as the host so if you want to supplement your order with outside orders, you will earn more free & half-price items!

3. Opportunity to come to my house when new stock is released (spring & fall) and sample new recipes & product. Yum!

Let me know if you want to join. It will be delicious and fun. It's never too late to try and spice up your food with delicious & healthy products.

  • 1 cup (250 ml) milk
  • 1/2 cup (125 ml) fresh or frozen sliced strawberries
  • 1/2 banana, chopped

Instructions

1. Blend all ingredients in a blender until smooth and frothy.
2. Pour into glasses and serve.

Epicure's Lemon Dilly Chicken
Epicure’s Lemon Dilly is a great way to add a ton of flavour without the salt!
Cost Per Serving: 1.58
Prep Time: 5 - 10 minutes
Cook Time: 20 minutes

Ingredients

  • 2 Tbsp (30 ml) olive oil
  • 6 boneless, skinless chicken breasts
  • 1 cup (250 ml) prepared Epicure's Chicken Bouillon
  • 1 Tbsp (15 ml) lemon juice
  • 1 tsp (5 ml) Epicure's Lemon Dilly Dip Mix
  • Epicure's Sea Salt, to taste
  • Epicure's Black Pepper, to taste
  • 1 Tbsp (15 ml) Epicure's 3 Onion Dip Mix

Instructions

1. Heat oil in Epicure's Eclipse® Coated Professional Frying Pan. Cook chicken over medium heat 3 minutes per side, or until golden brown.
2. Whisk together Chicken Bouillon, lemon juice, and Lemon Dilly Dip Mix.
3. Pour over chicken. Heat to boiling, then immediately reduce heat to a simmer and cook for 10–15 minutes, or until thickest part of chicken is no longer pink.
4. Transfer chicken to a serving plate. Bring sauce back to a boil for 2 minutes, or until reduced by half. Season to taste with Sea Salt and Black Pepper. Add 3 Onion Dip Mix and pour over chicken. 
Per Serving : Calories 190, Fat 7 g (Saturated 1.5 g, Trans 0 g), Cholesterol 75 mg, Sodium 140 mg, Carbohydrate 2 g (Fibre 0 g, Sugars 0 g), Protein 28 g.
Tips: Serving Suggestion: Serve with prepared Epicure’s What’s for Dinner? French Onion Soup. Also great with rice and steamed green beans or broccoli.
